I don't know much about consoles, and I am wondering if I can use this one for xbox development with CBX (Monkey-X):

Currently there is no official way to do it. The depreciated XNA target was the only way back in the days.

I'll definitely look into creating a UWP target which would include XBox One but probably not XBox 360 anymore. Is it still alive?
Not sure, the only console I have is ouya :)
..in short, you cant..back then, XNA will push you up to XBOX 360 Live..I do have Xbox license (360/One) as well as (PS3/4) and, answer is..nope..theoretically yes, but based on available tools i have seen, no..
