As Subject sugest. What software is best for capturing full screen videos not in a Window?

The learning curve is difficult, but there's no beating OBS in terms of robustness and features, plenty of pro streamers use it: https://obsproject.com/

Another one, for Windows only, and much easier to use although now archived (not updated anymore) is Captura by Mathew Sachin, really recommend it: https://mathewsachin.github.io/Captura/
